I've been vegetarian for over 30 years and have followed a low carb vegetarian diet since the conception of Divalicious Recipes, way back in 2011! I personally find that being creative with vegetables is enjoyable and fun. If in doubt though, roast it! When I bring one of my vegetarian dishes to a gathering I often watch the meat eaters devour it with relish, sometimes before I get a chance to reach for a plate myself!
