What Are Ferrero Rocher?

Ferrero Rocher are a popular Italian chocolate confectionery created by Ferrero in 1982. Each piece consists of several layers, beginning with a crisp, thin wafer covered in milk chocolate and crushed hazelnuts. Inside the wafer shell is a creamy, smooth chocolate hazelnut filling, similar to Nutella. At the core of the chocolate, there is a whole roasted hazelnut, adding a delightful crunch. Typically wrapped in gold foil, Ferrero Rocher is often recognized as a luxurious treat, perfect for gifting or enjoying during special occasions.

Who remembers the advert of Ferrero Rocher stacked high on a tray at an Ambassador's reception with the key phrase of "Monsieur, with these Ferrero Rocher you are really spoiling us". And who uses this catchphrase too when chocolates are bought out at holidays and dinner parties?!

  • Hazelnuts - roast the hazelnuts before use for a more robust flavor.

  • Vanilla extract - adds a natural sweetness and balances the flavors.
  • Cocoa Powder - unsweetened cocoa powder should be use.
  • Chocolate Chips - sugar-free dark chocolate chips (at least 85% cocoa).

How to Make Ferrero Rocher

Just like making homemade sugar-free Nutella, hazelnuts are ground in a food processor.

  1. Place the toasted hazelnuts in a food processor.
  2. Grind until they form a thick paste.

Homemade Ferrero Rocher Recipe Tips

For a fun twist, try adding a small dab of sugar-free hazelnut spread to the hazelnut filling for extra creaminess.

For an even crunchier texture, toast the chopped hazelnuts before using them to coat the balls. This enhances their nutty flavor.

Use a small cookie scoop or measuring spoon to create uniform-sized balls for even chilling and coating.

Add a pinch of cinnamon or sea salt to the chocolate coating for a gourmet touch.

Storage

Place the Ferrero Rocher in an airtight container and store in the fridge to maintain the firmness of the chocolate and will last up to 1-2 weeks when stored in a cool environment.

Freezing Ferrero Rocher

You can freeze the keto Ferrero Rocher for up to 2-3 months. Just thaw them in the fridge before serving for the best texture.

Ingredients
 
 

  • 1 cup roasted hazelnuts
  • 2 tablespoons cocoa powder unsweetened
  • 2 tablespoons allulose or other low carb sweetener
  • 1 teaspoon vanilla extract
  • 12 whole hazelnuts for the filling
  • 3.5 oz sugar-free dark chocolate (at least 85% cocoa) for the coating
  • 2 oz finely chopped hazelnuts for the coating

Instructions
 

Prepare the Hazelnut Center:

  • Take 12 whole hazelnuts and set them aside for the center of the Ferrero Rocher balls.

Make the Hazelnut Filling:

  • Blend the roasted hazelnuts in a food processor until they form a thick paste.
  • Add the sweetener, vanilla extract and cocoa powder. Blend the mixture until smooth. This will form the base of your keto Ferrero Rocher filling.

Shape the Filling:

  • Roll small portions of the hazelnut filling into balls (about 1 teaspoon each) and press a whole hazelnut into the center. Freeze the balls for 20-30 minutes until firm.

Prepare the Chocolate Coating:

  • Dip the frozen hazelnut balls into the melted chocolate and roll them in the chopped hazelnuts. Make sure they're fully coated. Place them on a baking sheet lined with parchment paper.
