Just 4 ingredients make these tasty sweet treats.

  • Natural Peanut Butter: Look for unsweetened, creamy peanut butter with no added sugar to keep it keto-friendly. The natural oils add a luscious texture.
  • Butter: These provide the fudge with its rich, melt-in-your-mouth consistency while adding healthy fats to support ketosis. Coconut oil can be substituted for a dairy-free fudge.
  • Low-Carb Sweetener: Choose a keto-approved sweetener like monk fruit or allulose. We like to use a brown monk fruit sweetener for a touch of extra flavor but feel free to use the sweetener of your choice. Powdered sweetener dissolves easy so can be a great choice.
  • Vanilla Extract: A splash of vanilla elevates the flavors and rounds out the taste of the fudge.
  • Optional Add-Ins: Add a sprinkle of sea salt, sugar-free chocolate chips, chopped nuts or a drizzle of sugar-free chocolate for an extra twist!

Ingredients
 
 

  • 1 cup peanut butter unsweetened
  • ½ cup butter unsalted
  • ½ cup brown monk fruit sweetener or other low carb sweetener
  • 1 teaspoon vanilla extract

Instructions
 

  • Line a small 1lb loaf pan with parchment paper, leaving some overhang for easy removal.
  • In a medium saucepan, melt the butter and brown sweetener for to 6-8 minutes until the mixture starts to caramelize.
  • Add the peanut butter and vanilla, and stir until smooth.
  • Pour into the lined pan and place in the fridge to chill for at least 3 hours until the mixture is firm.
  • Once set, lift the fudge out of the pan using the parchment paper and slice into small squares.

Notes

Makes about 20 small squares.
Store in the fridge in an air tight container.
