These Keto Ferrero Rocher are a low-carb, homemade version of the classic treat, featuring a crunchy hazelnut center and a crisp hazelnut-coated shell. Perfect for satisfying your sweet tooth without the carbs!

Ingredients

  • 1 cup roasted hazelnuts
  • 2 tablespoons cocoa powder unsweetened
  • 2 tablespoons allulose or other low carb sweetener
  • 1 teaspoon vanilla extract
  • 12 whole hazelnuts for the filling
  • 3.5 oz sugar-free dark chocolate (at least 85% cocoa) for the coating
  • 2 oz finely chopped hazelnuts for the coating

Instructions

Prepare the Hazelnut Center:

  • Take 12 whole hazelnuts and set them aside for the center of the Ferrero Rocher balls.

Make the Hazelnut Filling:

  • Blend the roasted hazelnuts in a food processor until they form a thick paste.
  • Add the sweetener, vanilla extract and cocoa powder. Blend the mixture until smooth. This will form the base of your keto Ferrero Rocher filling.

Shape the Filling:

  • Roll small portions of the hazelnut filling into balls (about 1 teaspoon each) and press a whole hazelnut into the center. Freeze the balls for 20-30 minutes until firm.

Prepare the Chocolate Coating:

  • Melt the sugar-free dark chocolate in a double boiler or microwave in short intervals, stirring frequently.

Coat the Ferrero Rocher Balls:

  • Dip the frozen hazelnut balls into the melted chocolate and roll them in the chopped hazelnuts. Make sure they're fully coated. Place them on a baking sheet lined with parchment paper.

Chill and Serve:

  • Let the coated Ferrero Rocher balls chill in the fridge for about 30 minutes to set. Enjoy your keto-friendly treats!

Notes

Makes 12 Ferrero Rocher balls.
