3.5ozsugar-free dark chocolate (at least 85% cocoa)for the coating

Instructions
Prepare the Hazelnut Center:
Take 12 whole hazelnuts and set them aside for the center of the Ferrero Rocher balls.
Make the Hazelnut Filling:
Blend the roasted hazelnuts in a food processor until they form a thick paste.
Add the sweetener, vanilla extract and cocoa powder. Blend the mixture until smooth. This will form the base of your keto Ferrero Rocher filling.
Shape the Filling:
Roll small portions of the hazelnut filling into balls (about 1 teaspoon each) and press a whole hazelnut into the center. Freeze the balls for 20-30 minutes until firm.
Prepare the Chocolate Coating:
Melt the sugar-free dark chocolate in a double boiler or microwave in short intervals, stirring frequently.
Coat the Ferrero Rocher Balls:
Dip the frozen hazelnut balls into the melted chocolate and roll them in the chopped hazelnuts. Make sure they're fully coated. Place them on a baking sheet lined with parchment paper.
Chill and Serve:
Let the coated Ferrero Rocher balls chill in the fridge for about 30 minutes to set. Enjoy your keto-friendly treats!
