Ferrero Rocher are a popular Italian chocolate confectionery created by Ferrero in 1982. Each piece consists of several layers, beginning with a crisp, thin wafer covered in milk chocolate and crushed hazelnuts. Inside the wafer shell is a creamy, smooth chocolate hazelnut filling, similar to Nutella. At the core of the chocolate, there is a whole roasted hazelnut, adding a delightful crunch. - Hazelnuts - roast the hazelnuts before use for a more robust flavor.
- Sweetener - we use allulose for the sweetener but monk fruit sweetener or your own choice can be used.
- Vanilla extract - adds a natural sweetness and balances the flavors.
- Cocoa Powder - unsweetened cocoa powder should be use.
- Chocolate Chips - sugar-free dark chocolate chips (at least 85% cocoa).
How to Make Ferrero Rocher
Just like making homemade sugar-free Nutella, hazelnuts are ground in a food processor.
- Place the toasted hazelnuts in a food processor.
- Grind until they form a thick paste.
- Add the sweetener, vanilla and cocoa powder. Blend until smooth. This will form the base of your keto Ferrero Rocher filling.
- Roll small portions of the hazelnut filling into balls (about 1 teaspoon each).
- Press a whole hazelnut into the center and freeze the balls for 20-30 minutes until firm.
- Melt the sugar-free dark chocolate in a double boiler or microwave in short intervals, stirring frequently. Dip the frozen hazelnut balls into the melted chocolate and roll them in the chopped hazelnuts.

For a fun twist, try adding a small dab of sugar-free hazelnut spread to the hazelnut filling for extra creaminess.
