This keto bread crumbs recipe is a quick and easy recipe that will give you a crunch to your dish. These low-carb bread crumbs can be used just like traditional bread crumbs without the added carbs and are gluten-free too.
Made with almond flour, these are a golden and crispy version of Panko breadcrumbs with a crunchy texture. You can make them chunky or crush them into finer breadcrumbs suitable to how you want to use them.
This low carb breadcrumbs recipe is a great alternative to pork rinds. Ground pork rinds can make a crispy low carb crumb but I need a meat free version. You could add seasonings to this mixture for extra flavor too.

How many carbs in breadcrumbs?
Regular breadcrumbs made from white or whole wheat bread typically contain about 20 to 25 grams of carbohydrates per ¼ cup serving. Panko bread crumbs are lighter and flakier, also contain around 20 to 25 grams of carbohydrates per ¼ cup serving.
A couple of tablespoons of these crispy bread crumbs have under 1 gram net carbs making them a healthier option and great for a keto diet.
Ingredients
Just a few basic low carb ingredients are required to make these keto panko breadcrumbs.
- Almond flour - use finely ground almond flour. I have not tried coconut flour but if you use it you may need an additional egg as coconut flour is very porous and needs more liquid.
- Olive oil - avocado oil could be substituted.
- Egg - Helps to bind the mixture.
- Butter - the cooked breadcrumbs are fried in butter for extra texture and flavor.
How to make keto breadcrumbs
Making keto bread crumbs in the microwave is a quick and convenient way to prepare this low-carb staple without turning on the oven. This method is perfect for those who are short on time or don't want to heat up their kitchen.
Mix all ingredients in a dish.
Microwave until firm and crispy.
Smash into crumbs with a rolling pin.
Fry in butter for a golden color.
Storage
Store keto breadcrumbs in an airtight container at room temperature. They will stay fresh for about 1 to 2 weeks. For a slightly longer shelf life, you can refrigerate your keto breadcrumbs in an airtight container. They should last for about 3 to 4 weeks when refrigerated.
Freezing
For long-term storage, freezing is the best option. Place the keto breadcrumbs in a freezer-safe bag or container. They can last for several months in the freezer—up to 6 months is typical. When you're ready to use them, you can use the breadcrumbs directly from the freezer without thawing; they defrost quickly due to their small size and dry nature.
Can these breadcrumbs be baked?
If you don't want to use a microwave this mixture can be baked in the oven but will take longer. Bake for 20 to 25 minutes at 180C/350 degrees until firm and crispy.
How to use keto bread crumbs
Keto breadcrumbs are a versatile ingredient that can be used in numerous ways to add texture and flavor to low-carb dishes. Here are some creative and effective ways to use keto breadcrumbs in your cooking:
- Breading for Fried Foods: Use keto breadcrumbs to coat chicken, fish or vegetables before frying or baking. First, dip the item in beaten egg or a low-carb milk substitute, then dredge it in seasoned keto breadcrumbs for a crispy finish.
- Meatloaf and Meatballs: Incorporate keto breadcrumbs into your meatloaf or meatballs to help bind the ingredients and add texture. Mix them with ground meat, eggs, and spices for a delicious low-carb meal.
- Casseroles: Sprinkle keto breadcrumbs on top of casseroles before baking to create a crunchy topping. This works great on dishes like gratins, baked macaroni and cheese (using low-carb pasta) or any vegetable bake.
- Stuffed Mushrooms or Peppers: Use keto breadcrumbs as part of the filling for stuffed mushrooms, peppers or other vegetables. Combine them with cheese, herbs, and finely chopped meats or vegetables for a filling meal.
- Thickening Agent for Soups and Sauces: Keto breadcrumbs can be used to thicken soups and sauces. They absorb excess liquid and add body to your dishes without the need for flour or cornstarch.
- Au Gratin Dishes: Create a crispy au gratin topping by mixing keto breadcrumbs with grated parmesan or other cheeses and herbs. Sprinkle over sliced vegetables or low-carb root alternatives, then bake until golden and crispy.
- Crumb Topping for Baked Goods: Mix keto breadcrumbs with a little sweetener and butter to create a crumb topping for muffins, pies, or crumbles that are keto-friendly.
- Schnitzel or Cutlets: Make a keto version of schnitzel by coating thin cuts of meat with keto breadcrumbs and frying until crispy. Serve with lemon wedges and a side of low-carb vegetables.
When using keto breadcrumbs, you can season them according to the recipe or your taste preferences. Common additions include salt, pepper, garlic powder, onion powder, Italian seasoning, or even some grated hard cheese for extra flavor.

Hi Angela! Receiving your bread crumb recipe this morning was a very pleasant surprise and a breath of fresh air! When I read your whole post I was elated and thought, "This could work!!!" For quite some time I have been ruthlessly searching for a bread crumb recipe that I like but have come up short. I don't like pork rind bread crumbs and others I have tried always fall off the meat that I'm frying (and this is more than likely not all of the recipe's fault...I need more low carb food preparation experience definitely.) Being able to fix yours in the microwave is a huge plus...quick and effortless, and your last step of sauteeing the bread crumbs in butter is brilliant! I haven't made this yet but as soon as I do I will let you know how it went. I feel optimistic for the first time lol! Thank you!
