This is an easy recipe that you will want to make again and again.
Beat the eggs.
Add the cheeses and jalapenos.
Pour into a baking dish and bake.

Storage

Ingredients
- 10 medium eggs
- 16 oz cottage cheese, plain
- 3 oz Cheddar cheese, grated
- 2 oz Parmesan cheese, grated
- 3 jalapenos, deseeded and chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat the oven to 350F/170C degrees and lightly grease a baking dish or casserole dish. We used a 9 x 13 inch dish.
- In a large mixing bowl, beat the eggs until well combined.
- Add the chopped jalapenos, cottage cheese, Cheddar cheese, Parmesan cheese, salt and pepper. Mix well.
- Pour the mixture into the baking dish and bake in the oven for 35-40 minutes until the top is golden brown and center is set.
- Cut into squares and serve.

I prefer full fat but you can you fat free too.

Made this with extra cheddar cheese. Instead of jalapenos, I added a small jar of pimento and a small can of Mexican green chilies. Also added cumin because it's the perfect spice for any egg dish.
