This cottage cheese bake is an easy and delicious breakfast recipe made with a combination of cheeses, eggs and jalapenos.

- 10 medium eggs
- 16 oz cottage cheese, plain
- 3 oz Cheddar cheese, grated
- 2 oz Parmesan cheese, grated
- 3 jalapenos, deseeded and chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
Preheat the oven to 350F/170C degrees and lightly grease a baking dish or casserole dish. We used a 9 x 13 inch dish.
In a large mixing bowl, beat the eggs until well combined.
Add the chopped jalapenos, cottage cheese, Cheddar cheese, Parmesan cheese, salt and pepper. Mix well.
Pour the mixture into the baking dish and bake in the oven for 35-40 minutes until the top is golden brown and center is set.
Cut into squares and serve.
Makes 6 large squares.
If the bake is taking too long to set, cover the baking dish with silver foil to help firm up the egg mixture.
