What Makes a Fritter a Fritter?
Fritters contain a primary ingredient that is mixed into the batter or dough. This can be anything from fruits, vegetables, or meat. For example, apple fritters have chunks of apple, corn fritters contain corn, and shrimp fritters include pieces of shrimp. So it's an easy guess as to what these cheesy chicken fritters are made of!
Ingredients
Chicken, cheese, seasoning and a binder are all you need to make these tasty keto chicken fritters.
- Chicken - We used chicken breasts but you could use chicken thighs or ground chicken for these fritters.
- Mozzarella cheese - helps to bind the fritters
- Cheddar cheese - use a good quality Cheddar cheese with a strong flavor.
- Almond flour - can be substituted with another low carb flour. If you use coconut flour, the quantity will need to be reduced.
- Spring onions - Also known as green onions, they add a light flavor to compliment the cheese. Chives would be a great substitute too.
- Garlic powder - a fresh minced garlic clove can be substituted.
- Parsley - fresh parsley go well with the chicken and cheese. Try fresh basil or fresh dill for another flavor.
- Egg - helps bind and is another great protein source.
How to Make Keto Cheesy Chicken Fritters
This is an easy and quick recipe to make which can be fried, grilled or air fried. We found air fried to be our favorite.
- Place the chicken breasts or meat from chicken thighs in a food processor to finely chop them.
- All them to the other ingredients in a mixing bowl.
- Form the chicken mixture into 8 patties.
- Air fry the chicken fritters.
- Or fry the chicken fritters.
- Serve with a favorite dipping sauce.
Storage
Although these chicken fritters are best served freshly made, you can store any leftovers in an air tight container in the fridge for 3-4 days. Reheat in the microwave, oven or air fryer.
Freezing
Ensure the fritters are completely cooled before freezing. To prevent the fritters from sticking together, place them on a baking sheet in a single layer and freeze for 1-2 hours. After flash freezing, transfer the fritters to a freezer-safe resealable bag or airtight container. Label the bag with the date. Store the chicken fritters in the freezer for up to 2-3 months.

Ingredients
- 1 ½ lb chicken breast
- 1 large egg
- ⅓ cup almond flour
- 1 cup mozzarella cheese, shredded
- ¼ cup Parmesan cheese, grated
- 2 spring onions
- 2 tablespoons parsley
- 1 tablespoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
Prepare the Chicken Fritters
- Place the chicken in a food processor and blitz until you have finely chopped chicken.
- In a large bowl, combine the chopped chicken, mozzarella cheese, parmesan cheese, eggs, almond flour, green onions, garlic powder, salt, and black pepper. Mix until all ingredients are well combined.
- Scoop about 3 to 4 tablespoons of the mixture and form it into small patties or fritters with your hands. (I wear gloves when doing this)
Fry
- In a large skillet, heat a tablespoon of olive oil over medium-high heat.
- Place the formed fritters in the hot oil and fry for about 4-6 minutes on each side, or until golden brown and cooked through.
- Remove the fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil.
Air Fry
- Preheat the air fryer for 5 minutes as per the manufacturer's instructions.
- Lightly spray the air fryer basket with olive oil spray to prevent sticking.
- Place the fritters in a single layer in the air fryer basket, ensuring they are not touching. You may need to cook them in batches depending on the size of your air fryer.
- Cook the fritters at 375°F (190°C) for 8-10 minutes. Flip them halfway through the cooking time to ensure even browning and crispiness.
- The fritters should be golden brown and cooked through. You can check by inserting a meat thermometer into the center; it should read at least 165°F (74°C).
- Remove the fritters from the air fryer and serve hot with your favorite keto-friendly dipping sauce or a side salad.
