Buffalo Cauliflower Bites are a tasty, healthy snack. This recipe turns fresh cauliflower into a crispy treat. The florets are dipped in a light batter and baked until golden brown. Buffalo Cauliflower Bites

Ingredients:

  • For the Cauliflower:
    • 1 medium head cauliflower, cut into bite-sized florets
    • ½ cup all-purpose flour (or a gluten-free alternative)
    • ½ cup unsweetened almond milk (or regular milk)
    • ½ teaspoon garlic powder
    • ½ teaspoon smoked paprika
    • Salt and pepper, to taste
  • For the Buffalo Sauce:
    • ½ cup buffalo hot sauce
    • 2 tablespoons melted butter (or olive oil for a dairy-free option)
    • Optional: 1 teaspoon Worcestershire sauce

Buffalo Cauliflower Bites Instructions:

  1. Preheat Oven: Set your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. Prepare Batter: In a large bowl, whisk together the flour, milk, garlic powder, smoked paprika, salt, and pepper until you have a smooth batter.
  3. Coat Cauliflower: Add the cauliflower florets to the bowl and toss them until each piece is evenly coated with the batter.
  4. Bake: Arrange the coated florets on the prepared baking sheet in a single layer and bake for 20-25 minutes, flipping halfway through, until they start to get crispy.
  5. Prepare Buffalo Sauce: While the cauliflower bakes, mix the buffalo hot sauce with the melted butter (and Worcestershire sauce, if using) in a small bowl.
  6. Toss in Sauce: Once the cauliflower is baked, transfer the florets to a large bowl, pour the buffalo sauce over them, and toss gently to coat evenly.
  7. Final Bake (Optional): For extra crispiness, return the sauced cauliflower to the baking sheet and bake for an additional 5-7 minutes.
  8. Serve: Enjoy warm with a side of ranch or blue cheese dressing and celery sticks if desired.
