Cheesy chicken fritters are a delightful fusion of tender chicken, savory cheese, and aromatic seasonings, all brought together in a perfectly crispy and golden brown package.
Place the chicken in a food processor and blitz until you have finely chopped chicken.
In a large bowl, combine the chopped chicken, mozzarella cheese, parmesan cheese, eggs, almond flour, green onions, garlic powder, salt, and black pepper. Mix until all ingredients are well combined.
Scoop about 3 to 4 tablespoons of the mixture and form it into small patties or fritters with your hands. (I wear gloves when doing this)
Fry
In a large skillet, heat a tablespoon of olive oil over medium-high heat.
Place the formed fritters in the hot oil and fry for about 4-6 minutes on each side, or until golden brown and cooked through.
Remove the fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil.
Air Fry
Preheat the air fryer for 5 minutes as per the manufacturer's instructions.
Lightly spray the air fryer basket with olive oil spray to prevent sticking.
Place the fritters in a single layer in the air fryer basket, ensuring they are not touching. You may need to cook them in batches depending on the size of your air fryer.
Cook the fritters at 375°F (190°C) for 8-10 minutes. Flip them halfway through the cooking time to ensure even browning and crispiness.
The fritters should be golden brown and cooked through. You can check by inserting a meat thermometer into the center; it should read at least 165°F (74°C).
Remove the fritters from the air fryer and serve hot with your favorite keto-friendly dipping sauce or a side salad.
