- Almond Flour - adds structure and a mild sweetness to the cookies while keeping them low-carb.
- Unsweetened coconut flakes - we use unsweetened desiccated coconut, also known as shredded coconut. It provides a chewy texture and natural sweetness that complements the nutty flavors.
- Cocoa powder - for a deep chocolate flavor, use unsweetened cocoa powder.
- Sweetener - we use brown monk fruit sweetener, but other low carb sweetener can be used.
- Chocolate chips - these are optional but use sugar free chocolate chips.
- Coconut oil - Adds moisture and a subtle coconut flavor while helping the cookies firm up when chilled.
- Vanilla - Enhances the overall flavor with a warm, sweet aroma.
How to Make Keto No Bake Cookies

Add the dry ingredients in a bowl.
Add the pecans and almond butter.
Optional chocolate chips to cookie dough mixture.
Work into a dough.
Form into cookies and freeze for 20 minutes.

Ingredients
- 1 cup almond flour
- 1 cup desiccated coconut
- 1 cup pecans
- 2 tablespoons cocoa powder, unsweetened
- ⅓ cup brown monk fruit sweetener
- ¾ cup almond butter
- ¼ cup coconut oil
- 1 teaspoon vanilla extract
- ¼ cup chocolate chips, sugar free optional
Instructions
- In a large mixing bowl, combine the almond flour, low carb sweetener, shredded coconut and cocoa powder. Stir until evenly mixed.
- Stir in the almond butter, coconut oil, vanilla and pecans. Mix well.
- If you are using chocolate chips, stir them into the mixture, and with your hands, form into a dough.
- Line a baking sheet with parchment paper. Scoop out spoonfuls of the mixture and drop them onto the parchment. Flatten each mound slightly into a cookie shape.
- Place the baking sheet in the refrigerator for at least 30 minutes, or until the cookies are firm and set.
- Once chilled, the cookies are ready to enjoy. Decorate with chopped nuts or melted chocolate if you wish.
