These keto lasagna noodles are a great low carb and high protein replacement for pasta sheets. Made with just 4 ingredients, these can be used to make your favorite lasagna recipe for a rich and satisfying base for your keto lasagna.
You may think that lasagna noodles made out of three cheeses would melt when baking in a lasagna but these hold together well and work like a pasta sheet and give layers. This is similar to a fathead dough but without almond flour or coconut flour.
I had pondered on using the cottage cheese flatbread recipe for lasagna noodles but wanted a bit more structure but without flour. So used other cheeses and it worked out great. I used it for a keto chicken broccoli lasagna recipe for the Chief Taster who made positive noises. I think these would be great sliced and used for pasta noodles, but that's another recipe experiment. I had a nibble as I was slicing them for the lasagna and enjoyed the taste. Definitely a recipe to play with!

Carbs in Lasagna Noodles
As traditional lasagna noodles are made from flour, they contain around 30-40 grams of carbohydrates per 2-ounce (56-gram) serving. So, a low carb alternative needs to be used to enjoy the comfort dish of a baked lasagna. Our recipe has just 5 grams net carbs per third of a sheet.
Ingredients
Only 4 ingredients make these low carb lasagna noodles. Feel free to season with salt and pepper if you want to use this as pasta noodles.
- Mozzarella cheese - shredded
- Parmesan cheese - a hard cheese that helps bind the mixture. Use freshly shredded for a full flavor.
- Eggs - use at room temperature.
- Cottage cheese - helps the protein content but can be substituted with cream cheese.
Step by Step Instructions
- Place all ingredients in a food processor.
- Blitz until smooth. Don't be alarmed at the liquid consistency!
- Pour into a prepared baking pan.
- Bake until firm.
- When you are ready to use, slice into pieces to fit your lasagna dish.
- Start the layering of a keto lasagna with the noodles in a baking dish!
Storage
Store the noodles in an airtight container in the refrigerator for up to 4 days.
Recipe Tips
Lining the baking sheet with parchment paper is crucial to prevent sticking and makes it easier to remove the noodles once baked. I spray the parchment paper with oil before pouring in the lasagna noodle mixture just as a precaution to stop it sticking. Once you bake the cottage cheese flatbread on unsprayed parchment paper, that mistake will haunt you!
Allow the noodles to cool completely before cutting. This helps them firm up, making them easier to handle and cut into strips.
You can add a pinch of garlic powder, onion powder, or Italian seasoning to the cheese mixture for extra flavor.

- Zucchini Slices: Thinly sliced and baked or raw for a zucchini lasagna.
- Eggplant Slices: Thinly sliced, grilled or baked to be used in an eggplant lasagna.
- Cabbage Leaves: Blanched or steamed.
- Portobello Mushrooms: Large, flat slices, grilled or roasted.

Ingredients
- 2 cups mozzarella cheese, shredded
- ½ cup Parmesan cheese, shredded
- 1 cup cottage cheese
- 3 large eggs
Instructions
- Preheat your oven to 375°F (190°C). Line a 18 x 13 inch baking sheet with parchment paper. Lightly spray the parchment paper with oil.
- Place the eggs and cheeses into a food processor or blender and blitz until smooth.
- Pour the cheese mixture onto the prepared baking sheet. Use a spatula to spread it out evenly, creating a thin, even layer. Aim for about ¼-inch thickness.
- Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the mixture is set and slightly golden on top.
- Remove from the oven and let it cool completely. Once cooled, cut the sheet into lasagna noodle-sized strips.
- Use these noodles as you would regular lasagna noodles, layering them with your favorite keto-friendly lasagna fillings.
