Cottage cheese pizza made with almond flour is a delicious high protein and keto-friendly twist on traditional pizza. This recipe features a unique crust made with cottage cheese and almond flour, creating a soft and chewy base that’s both keto-friendly and gluten-free and 22 grams of protein per serving.

We enjoyed this recipe and it makes a fairly firm thin crust pizza base. Next time I will bake it longer to see how crispy I can get it without burning it! It was firm enough to pick up a slice and satisfied my pizza craving for lunch that day!

How to Make Cottage Cheese Pizza

This is similar to our cottage cheese flatbread recipe, in that the cottage cheese is blended with eggs to make a smooth mixture for the pizza crust.

Blend cottage cheese, eggs and seasoning.

Mix well until smooth.

Recipe Tips

  • If your cottage cheese is particularly watery, drain off any excess liquid. This will help prevent the crust from becoming soggy.

Pizza Base

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup almond flour

Toppings

  • ½ cup Marinara sauce
  • 1 cup Mozzarella cheese

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a baking sheet or pizza pan with parchment paper. Spray the parchment paper with oil.
  • In a blender, blend the cottage cheese, eggs, garlic powder and Italian seasoning until smooth.
  • Add the cottage cheese mixture to a large mixing bowl and stir the almond flour in until you have a smooth, thick batter.
  • Spread the mixture evenly onto the prepared baking sheet or pizza pan, shaping it into a circle or rectangle to your desired thickness (about ¼ inch thick).
  • Bake the crust for 25-30 minutes, or until it is firm and slightly golden around the edges.
  • Remove the crust from the oven and spread the marinara sauce evenly over it. Sprinkle the mozzarella cheese on top.
  • Bake again for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Serve warm, optionally garnishing with extra Italian seasoning or fresh basil. Enjoy your cottage cheese pizza!
