I loved how the sweet peach slices paired well with the creamy mozzarella and a drizzle of pesto. This was a surprise hit and a great twist on the traditional caprese salad, full of the flavors of summer.

Are peaches keto-friendly?

Peaches are more to the low carb scale than keto as the carbs in peaches can vary slightly depending on their size and ripeness, but on average, a medium-sized peach (about 150 grams) contains approximately 12-15 grams of carbohydrates and around 10-13 grams of net carbs.

Why put peaches in a caprese salad?

This was the first question the Chief Taster asked when I was making this. He did approach the salad with caution and suspicion, but after one mouthful his fork went back in for more.

Adding peaches introduces a sweet and juicy element that complements the savory flavors of the cheese and the freshness of the basil. The sweetness of the peaches contrasts nicely with the acidity of the tomatoes and balsamic vinegar, while the creamy mozzarella provides a mild, smooth backdrop.   • Mozzarella - fresh mozzarella is essential. Bufala mozzarella is considered the traditional and most authentic type of mozzarella for Caprese salad. It has a more delicate flavor and creamier texture compared to cow's milk mozzarella.
  • Peaches - Do not use tinned peaches. Opt for ripe, but not overly soft, peaches for the best flavor and texture. Look for peaches that are slightly firm to the touch with a sweet aroma.
  • Tomatoes - as mentioned above, select a variety of tomato that has enough flavor for a caprese salad.
  • Pesto - This is entirely optional, but we added a touch of pesto for an extra basil flavor.

  • 2 medium peaches
  • 2 large roma tomatoes or tomatoes of choice
  • 8 oz Bufala mozzarella ball

Dressing

  • 1 tablespoon balsamic vinegar
  • 1 teaspoon keto honey
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

To Serve

  • 1 tablespoon pesto
  • 5 leaves basil, torn

Instructions
 

  • Wash and dry the peaches, tomatoes, and basil leaves.
  • Slice the peaches, tomatoes, and fresh mozzarella cheese into thin, even slices.
  • Arrange the peach slices, tomato slices, and mozzarella slices alternately on a serving platter or individual plates, overlapping them slightly.
