This creamy cucumber salad is a refreshing and satisfying dish that’s perfect for any occasion. Creamy Cucumber Salad

Creamy Cucumber Salad Ingredients:

  • 4 medium cucumbers, sliced
  • 1 medium onion, sliced
  • ¾ cup plain yogurt
  • ½ cup mayonnaise
  • 2 tablespoon fresh lime juice 
  • 2 garlic cloves, minced
  • ½ teaspoon dried dill
  • ¼ teaspoon salt (plus extra for sprinkling)

Creamy Cucumber Salad

Instructions:

  1. Start by slicing the cucumbers and onion, then place them in a colander. Sprinkle sea salt over them and add a few drops of lime juice. Let the veggies sit for about 10 minutes to draw out excess moisture. After 10 minutes, rinse the veggies under cold running water, gently pressing them to squeeze out the liquid.
  2. While the veggies are resting, prepare the dressing: in a bowl, combine the yogurt, mayonnaise, lime juice, minced garlic, dried dill, and salt. Stir until well combined.
  3. Add the prepared cucumbers and onion to a serving bowl. Pour the creamy dressing over the veggies and toss everything together until well coated.
  4. Optionally, garnish with some fresh herbs and lime slices. Enjoy!
