This simple recipe is perfect for those who crave a quick and satisfying breakfast without the need for a complicated batter or additional ingredients.

Carbs in Peanut Butter

The number of carbohydrates in peanut butter can vary slightly depending on the brand and any added ingredients, but here's a general guideline for the carbohydrate content in peanut butter:

  • Creamy Peanut Butter (per 2-tablespoon or 32-gram serving): Typically contains around 6-8 grams of total carbohydrates and 2-3 grams of dietary fiber, resulting in approximately 4-5 grams of net carbs.
  • Chunky or Crunchy Peanut Butter (per 2-tablespoon or 32-gram serving): Generally has a similar carbohydrate content, around 6-8 grams of total carbohydrates and 2-3 grams of dietary fiber, resulting in approximately 4-5 grams of net carbs.

  • Peanut Butter - The peanut butter provides both flavor and the necessary fat for the waffle. Opt for natural peanut butter that contains only peanuts and possibly a pinch of salt. Avoid peanut butter with added sugars or hydrogenated oils for the best flavor and texture.
  • Eggs - Use medium or small eggs. A large will make the mixture a bit "eggy". If you only have large eggs, add more peanut butter to the mixture.

How to make peanut butter waffles

This is a quick and easy low carb and dairy free waffle recipe for one.

Mix the peanut butter and egg until smooth.

Peanut Waffles Recipe Tips

If the batter is too thin, add additional peanut butter. We use a large tablespoon of peanut butter.

Peanut waffles are not be as sweet as traditional waffles. If you prefer a sweeter taste, consider adding a low carb sweetener to the batter. Start with a small amount and adjust to your liking.

Variations

Feel free to experiment with your peanut waffle recipe by adding ingredients like chocolate chips, cinnamon, chopped pecans, vanilla extract or even a pinch of salt to enhance the flavor.

Almond Butter Waffles

If you have a peanut allergy, almond butter can be substituted for the peanut butter. It works just as well and you could use other nut butters too. A seed butter such as sunflower seeds will work nicely.

Storage

These peanut waffles are best served fresh, but if you have leftover waffles, allow them to cool completely, then store them in an airtight container or resealable plastic bag in the fridge. They will last up to 4 days. You can freeze them for longer-term storage and reheat them in a toaster or oven when you're ready to enjoy them again.

Serving Suggestions

No serving of waffles would be complete without a covering of whipped cream and syrup. Use a low carb sugar-free maple syrup such as the Besti Brand Pancake Syrup but other topping suggestions are:

  • Low Carb Fruits - raspberries, blueberries, blackberries and strawberries.
  • Chocolate chips - used sugar free chocolate chips.
  • Sauces - Our keto caramel sauce is delicious.
  • Coconut - toasted unsweetened coconut flakes
  • Low Carb Nuts - chopped almonds, walnuts or pecans

  • 1 medium egg
  • 1 tablespoon peanut butter (generous serving)

Instructions
 

  • Begin by preheating your waffle iron according to its manufacturer's instructions. It's essential to make sure it's hot and ready to cook your peanut butter waffles.
  • In a mixing bowl add the peanut butter and one large egg. Whisk them together until you have a smooth and well-incorporated mixture. This will be your waffle batter.
  • Lightly grease the waffle iron with cooking spray or a small amount of oil to prevent sticking.
  • Pour the waffle mixture onto the hot waffle iron. Close the waffle iron and cook according to the manufacturer's instructions. This usually takes 2-4 minutes, or until the waffle is golden brown and slightly crispy.
