How to Make White Chocolate No Bake Cheesecake

Grind the pecans in a food processor.
Add butter and sweetener, then press into springform cake tin.
Melt white chocolate chips in Bain Marie.
Whip the cream until stiff.
Beat cream cheese and add the white chocolate.
Fold in the cream and pour on top of the base, then chill overnight.

Firmly press the pecan mixture into the pan and refrigerate for at least 30 minutes before adding the filling. This helps it set and prevents crumbling when sliced.

Instructions
- In a food processor, blend the pecans until finely ground but not a paste.

- Press the mixture firmly into the base of a 8 inch springform pan lined with parchment paper. Refrigerate while you prepare the filling.
- Melt the white chocolate in a microwave-safe bowl or over a double boiler, stirring frequently to prevent burning. Let it cool slightly.
- In a large bowl, beat the cream cheese until smooth. Gradually add the melted white chocolate and continue mixing.
