In a food processor, blend the pecans until finely ground but not a paste.
Stir in the melted butter and sweetener until well combined.
Press the mixture firmly into the base of a 8 inch springform pan lined with parchment paper. Refrigerate while you prepare the filling.
Melt the white chocolate in a microwave-safe bowl or over a double boiler, stirring frequently to prevent burning. Let it cool slightly.
In a large bowl, beat the cream cheese until smooth. Gradually add the melted white chocolate and continue mixing.
In another mixing bowl, whisk the cream until stiff peaks form.
Fold the cream into the cream cheese mixture.
Stir in the orange extract and grated orange rind, tasting and adjusting for desired citrus flavor.
Pour the filling over the chilled base and smooth the top with a spatula.
Cover and refrigerate for at least 4-6 hours, or until fully set.
Carefully remove the cheesecake from the springform pan. Garnish with additional orange zest or pecans if desired. Slice and serve!
Makes 10 slices. It's very rich so you may want to start with a thin slice.
Store in the fridge for up to 5 days.
