Carbs in Strawberries
Berries are a great low carb fruit and fresh strawberries are no exception. A 100 gram serving yields about 7-8 grams carbohydrates and 2 grams fiber, leaving 5-6 net carbs per serving.
Ingredients
Only a few ingredients are used in this frozen low carb treat.
- Strawberries - fresh are best as frozen will be too soggy if defrosted.
- Plain Greek yogurt - check the labels for added sugar.
- Chocolate chips - use low sugar chocolate chips or cut a dark chocolate bar up.
- Sweetener - we used allulose as it dissolves well in the yogurt but any other low carb sweetener will work. A keto honey or maple syrup can be used.
- Coconut oil - added to the melted chocolate for a smoother texture and gives the coating a shiny appearance.
How to make strawberry clusters
This is an easy recipe and one you could have fun making with the kids. We have used silicone molds for the strawberry yogurt mixture but you could dollop them freehand to freeze too.
Chop the strawberries and add to a bowl with yogurt and sweetener.
Mix well.
Spoon into silicone molds or scoop a dollop onto parchment paper. Freeze.
Melt the chocolate chips and coconut oil in a pan over a bowl of water.
Dip the frozen strawberry mixture into the chocolate and cover.
Place the yogurt bites on parchment paper and freeze until ready for snacking.
Storage
If you've made individual servings, you can wrap each treat individually in wax paper or parchment paper. This step helps prevent them from sticking together and makes it easier to grab one serving at a time.
Place the wrapped or unwrapped treats in an airtight container. Make sure the container has a tight seal to prevent freezer burn and maintain freshness.
Recipe Tips
Swap the strawberries with other berries such as blueberries or raspberries.
Add additional ingredients for texture and flavor, such as chopped nuts (e.g., almonds, walnuts), shredded coconut, or crushed keto granola. Fold these ingredients into the yogurt mixture before forming the clusters.
Before serving, remove the clusters from the freezer and allow to thaw for a couple of minutes before eating them.
Decorate with a sprinkle of sea salt.
