This creamy and low-carb keto peanut butter fudge is a quick, no-bake recipe made with just a few wholesome ingredients. With a smooth texture and rich peanut butter flavor, it’s a perfect sweet treat.

Line a small 1lb loaf pan with parchment paper, leaving some overhang for easy removal.
In a medium saucepan, melt the butter and brown sweetener for to 6-8 minutes until the mixture starts to caramelize.
Add the peanut butter and vanilla, and stir until smooth.
Pour into the lined pan and place in the fridge to chill for at least 3 hours until the mixture is firm.
Once set, lift the fudge out of the pan using the parchment paper and slice into small squares.
Makes about 20 small squares.
Store in the fridge in an air tight container.
