Ingredients
- 1 cup peanut butter unsweetened
- ½ cup butter unsalted
- ½ cup brown monk fruit sweetener or other low carb sweetener
- 1 teaspoon vanilla extract
Instructions
- Line a small 1lb loaf pan with parchment paper, leaving some overhang for easy removal.
- In a medium saucepan, melt the butter and brown sweetener for to 6-8 minutes until the mixture starts to caramelize.
- Add the peanut butter and vanilla, and stir until smooth.
- Pour into the lined pan and place in the fridge to chill for at least 3 hours until the mixture is firm.
- Once set, lift the fudge out of the pan using the parchment paper and slice into small squares.
