Cranberry Chicken Salad Ingredients
Using cooked chicken and a few pantry ingredients you can have a quick and easy salad.
- Cooked chicken - we poached chicken breasts with peppercorns and a bay leaf, then shredded it. Rotisserie chicken is just as easy to use.
- Walnuts - for extra flavor, toast the walnuts before use.
- Cranberries - we used dried cranberries but fresh could be use. When using dried cranberries, check the packet for additional sugars. Or use home made dried cranberries.
- Plain Greek Yogurt - this could be substituted with sour cream.
- Mayonnaise - home made mayo is always our favourite as there is no added sugar and we prefer the taste.

Ingredients
- 3 cups cooked chicken shredded
- ½ cup walnuts toasted
- ½ cup dried cranberries
Dressing
- ½ cup homemade mayonnaise
- ¼ cup Greek yogurt
- 1 teaspoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1 tablespoon dill, chopped
- 1 tablespoon parsley, chopped
- 1 teaspoon lemon juice
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Chop the cooked chicken.
- In a large bowl mix the dressing ingredients together until smooth.
- Add the chopped chicken, walnuts and dried cranberries.
- Serve, or store covered in the refrigerator for up to 3 days before serving.
