    An easy arugula salad is served with artichokes, sun-dried tomatoes and olives for a healthy side salad that goes well with any dish.  It’s good enough to enjoy as a main salad too.

    If you are bored of the packed leaf salads or spinach salads, then try the arugula leaf.   It can be served as a simple side salad with just a drizzle of olive oil and seasoning.  It has enough flavour to stand alone. However, in this recipe I have served a hearty arugula salad with artichokes, sun-dried tomatoes and black olives.  I was in a Mediterranean flavour mood that day.

    As well as being colourful, this arugula salad recipe is a great mix of colours.  It always helps when food is appealing to the eye as well as smelling good.   We have a great local arugula grown in St Lucia with leaves larger than the prepacked ones I used to purchase in the UK.  When it’s arugula season here, this arugula salad will always appear on the menu that week.

    What is Arugula

    Arugula has a peppery taste that will give your salad extra flavour and is a member of the same vegetable family as brussels sprouts, kale, cauliflower and broccoli.    Outside of North America arugula is often know as Rocket.   As well as being a low carb food, arugula is high in calcium, Vitamins C, K and A.

    What Goes with Arugula Salad

    The beauty of arugula is that it’s strong flavour will compliment most food.  Serve it with salmon, chicken or steak.  For vegetarians it goes well with avocados and eggs.

    This tasty arugula salad is also delicious served with a scattering of Feta or Parmesan cheese.  I was trying to keep the salad dairy free when I made it as I was serving it with a lot of cheese dishes with my cheesy zucchini lasagna roll ups taking centre stage.

    Ingredients
     
     

    • 3 cups arugula
    • 7 oz artichokes jar or tinned
    • ½ cup sun-dried tomatoes choppedd
    • 8 black olives de-stonned

    Dressing

    • 1 teaspoon Dijon mustard
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice
    • ½ teaspoon salt
    • ½ teaspoon black pepper

    Instructions
     

    • Mix the dressing in a bowl.
    • Place the arugula in a serving dish.
    • Scatter the artichokes, sun-dried tomatoes and olives over the arugula.
    • Drizzle the dressing over the salad and serve immediately
