As with any salad, you want to use the freshest ingredients you can find for a great flavor. We have kept this spinach arugula salad onion free but feel free to add slices of red onion or chopped green onions to your own taste.

How to make a spinach and arugula salad

Making a salad is easy. Wash and dry the produce. Mix the homemade salad dressing. Chop, assemble and serve!

Storage

Ideally, this refreshing salad should be serve freshly made. It's best to store the dressing separately from the salad ingredients to prevent the greens from becoming soggy. You can store the dressing in a sealed container in the refrigerator and add it to the salad just before serving.

If you have leftover salad, store it in an airtight container in the refrigerator. However, keep in mind that the salad may not stay as fresh and crisp once it's been dressed.

Ingredients
 
 

  • 2 cups baby spinach
  • 1 cup arugula
  • ¼ cup walnuts, toasted
  • ½ avocado
  • 4 large strawberries
  • 3 oz Feta cheese, crumbled

Dressing

  • 2 tablespoons olive oil
  • ½ teaspoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • ¼ cup Greek yogurt
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Wash the arugula and baby leaves thoroughly and pat them dry with paper towels or a salad spinner.
  • In a large bowl or on a serving plate, scatter the arugula and spinach leaves.
  • Remove the tops from the strawberries and slice.
  • Remove the stone and peel from the avocado and chop.
  • Layer the strawberries and avocado on the leaves.
  • Scatter the Feta cheese and walnuts.
  • Whisk the dressing ingredients in a small bowl.
  • Drizzle the dressing over the salad and serve.
