Ingredients
 
 

  • 1 ¼ cup almond flour
  • ½ cup peanut butter
  • ¼ cup brown monkfruit sweetener or other low carb sweetener
  • 1 teaspoon vanilla

Instructions
 

  • Preheat the oven to 180C/350F degrees and line a baking tray with parchment paper.
  • Place all the ingredients into a large mixing bowl and mix into a dough. Using your clean hands to work the mixture into a dough works too!
  • Using a cookie scoop, scoop out small portions of dough and roll them into balls. Place them on a baking sheet lined with parchment paper and flatten them slightly with a fork, creating a crisscross pattern.
  • Bake the cookies for about 10-12 minutes, or until they are golden brown around the edges.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Makes 10 cookies.
If you find the mixture too crumbly, you can add an egg to bind the dough.
