Almond flour peanut butter cookies offer a wonderful combination of moist and chewy interiors with slightly crumbly edges, a rich and nutty flavor, and a melt-in-the-mouth experience for peanut butter lovers.

Preheat the oven to 180C/350F degrees and line a baking tray with parchment paper.
Place all the ingredients into a large mixing bowl and mix into a dough. Using your clean hands to work the mixture into a dough works too!
Using a cookie scoop, scoop out small portions of dough and roll them into balls. Place them on a baking sheet lined with parchment paper and flatten them slightly with a fork, creating a crisscross pattern.
Bake the cookies for about 10-12 minutes, or until they are golden brown around the edges.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Makes 10 cookies.
If you find the mixture too crumbly, you can add an egg to bind the dough.
