- 1 ¼ cup almond flour
- ½ cup peanut butter
- ¼ cup brown monkfruit sweetener or other low carb sweetener
- 1 teaspoon vanilla
Instructions
- Preheat the oven to 180C/350F degrees and line a baking tray with parchment paper.
- Place all the ingredients into a large mixing bowl and mix into a dough. Using your clean hands to work the mixture into a dough works too!
- Using a cookie scoop, scoop out small portions of dough and roll them into balls. Place them on a baking sheet lined with parchment paper and flatten them slightly with a fork, creating a crisscross pattern.
