I wanted a dish that combined tomatoes and broccoli and together they are a great combination of antioxidants and phytochemicals. So the easiest thing to do was to make a soup out of them!

The result with a thick tasty soup. This would be a good way to sneak broccoli into your loved one's diet. They will never know!

The Ingredients
Just a few simple ingredients are used to make this easy and hearty soup.

How to Make Broccoli Tomato Soup
In under 30 minutes you have a bowl of thick comforting soup.

Cook onion and garlic in a saucepan

Add chopped broccoli to the saucepan

Add tinned tomatoes and stock.

Blend until smooth with an immersion blender
Storage
This soup should be stored in the refrigerator in an airtight container and it will last up to 4 to 5 days.
This soup freezes well (I have some in my freezer right now). Store in either ziplocked bag or an airtight container and it will freeze for 3 months.

Broccoli & Tomato Soup

Ingredients
- 1 head broccoli
- 1 small onion chopped
- 2 cloves garlic cloves peeled & chopped
- 14 oz Chopped tomatoes tinned
- 1 cup stock vegetable or chicken
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Heat the oil in a large saucepan.
- Add the onion and garlic and saute gently for 3 minutes.
- Add the broccoli and cook for a further 2 minutes.
- Add the tomatoes and stock, bring to the boil, cover and cook for 15 minutes until the broccoli is tender.
- Blend with either a hand blender or food processor. Season to taste.
- Eat and enjoy!
