This is a low carb and gluten-free dish for one which is ready in under 30 minutes. Double up the recipe for a salmon dinner for two if you are in a romantic mood!

Marry Me Salmon is a flavorful and indulgent dish made with salmon fillets cooked in a rich, creamy sauce, often featuring ingredients like garlic, sun-dried tomatoes, Parmesan cheese, and fresh herbs. The dish is inspired by the idea that it's so delicious, it could inspire someone to propose marriage after tasting it—hence the playful name.

Ingredients

The ingredients are similar to Marry Me Chicken but with a salmon fillet instead!

  • Salmon Fillet - Its natural oils and flavor pair perfectly with creamy sauces. We use skinless. Or I remove the skin and make it into a dog treat!
  • Parmesan Cheese - Adds a savory, salty flavor to the dish, complementing the cream and tomatoes. It also thickens the sauce slightly.
  • Sun Dried Tomatoes - These tomatoes bring a concentrated sweetness and a chewy texture, balancing the richness of the sauce. They also add a tangy note that cuts through the creaminess.
  • Italian Seasoning - Used to season the salmon before cooking.
  • Butter - Makes a creamier and richer sauce
  • Olive Oil - Used for searing the salmon, olive oil adds a smooth, slightly fruity flavor.
  • Fresh Garlic - Garlic adds a bold, aromatic flavor that enhances the overall depth of the sauce. Add more cloves if you wish.
  • Red Chili Flakes - optional but adds a slight kick to the dish.
  • Heavy Cream - Creates the rich and velvety texture of the sauce, helping to blend all the flavors together. It’s essential for making the sauce creamy and luxurious.
  • Stock - also called Broth. Use chicken or vegetable stock. It helps to thin the cream sauce.

How to Make Marry Me Salmon

Ready in under 30 minutes, this is a quick and easy dish for one.

Season the salmon.

Sear in a pan, then set aside.

How to Store Marry Me Salmon

Ideally, this is best served fresh from the pan but any leftovers can be stored in an airtight container in the fridge. When reheating leftovers on the stove, add a small splash of cream, broth, or water to the sauce to keep it from becoming too thick or drying out.

  • Make sure the salmon fillets are dry before searing to get a beautiful golden crust.
  • If you’re using skin-on salmon, start by cooking it skin-side down for crispy skin.
  • Full-fat heavy cream will give the sauce a rich, silky texture. Avoid using low-fat substitutes, as they may curdle.
  • Choose oil-packed sun-dried tomatoes for extra flavor. If using dry-packed, rehydrate them in warm water first.

Ingredients
 
 

  • 1 salmon fillet (about 7oz)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Sauce

  • 2 tablespoons butter
  • 1 clove garlic, minced
  • ½ cup chicken broth
  • ⅓ cup heavy cream
  • ¼ cup Parmesan cheese, grated
  • ¼ cup sun dried tomatoes
  • ½ teaspoon lemon zest
  • ¼ teaspoon thyme
  • ¼ teaspoon oregano
  • 1 pinch red chili flakes optional

Instructions
 

  • Pat the salmon fillets dry with paper towels, then season both sides with Italian seasoning, salt and black pepper.
  • In a medium skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add the salmon fillet, skin-side down (if using skin-on fillets). Cook for 3-4 minutes on each side until golden brown and just cooked through. Remove the salmon from the pan and set aside.
  • In the same pan, add the butter and garlic. Saute the garlic for 1 minute.
  • Add the chicken broth, heavy cream and Parmesan cheese. Stir and cook for 2 minutes.
  • Add the sun dried tomatoes, seasoning and lemon zest, stirring to combine. Let the sauce simmer for 3-4 minutes, until it starts to thicken slightly.
  • Adjust the seasoning and add the red chili flakes if using.
  • Nestle the seared salmon fillet back into the sauce, spooning some of the sauce over the top of each fillet. Reduce the heat to low and let the salmon simmer in the sauce for 3-4 minutes, ensuring it’s heated through and absorbing the flavors.
  • Remove the pan from the heat and garnish with fresh basil.
  • Serve the Marry Me Salmon with a side of roasted vegetables, cauliflower rice, or a green salad to complement the richness of the dish.
