  • Cucumber - we use an English cucumber for this recipe but a Persian cucumber can be used too. They provide a fresh, crisp texture and a mild, slightly sweet flavor. Cucumbers are also hydrating due to their high water content.
  • Strawberries - add a vibrant color and a sweet, slightly tart flavor. They also contribute antioxidants and vitamins, enhancing the nutritional value of the salad.

Ingredients
 
 

  • 1 cup English or Persian cucumber, sliced
  • 1 cup strawberries, sliced
  • ¼ cup Feta cheese, crumbled
  • 1 avocado, peeled, stone removed and sliced
  • 1 tablespoon fresh mint, chopped

Dressing

  • 2 tablespoons avocado oil
  • 1 tablespoon keto honey
  • 2 tablespoons Greek yogurt
  • 1 teaspoon Dijon mustard
  • 2 tablespoons balsamic vinegar
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Place the sliced cucumber, strawberries and avocado in layers on a serving plate.
  • Scatter the Feta cheese over the salad.
  • Mix all the dressing ingredients together until smooth, and drizzle the dressing over the salad.
  • Scatter the chopped mint over the salad.
  • Serve immediately.
