This delicious and easy-to-make salad combines the sweetness of strawberries with the freshness of cucumbers for a perfect summer dish.

Ingredients

English or Persian cucumber, sliced

strawberries, sliced

Feta cheese, crumbled

avocado, peeled, stone removed and sliced

tablespoon
fresh mint, chopped
Dressing

tablespoons
avocado oil

tablespoon
keto honey
2
tablespoons
Greek yogurt
1
teaspoon
Dijon mustard
2
tablespoons
balsamic vinegar
½
teaspoon
salt
½
teaspoon
black pepper
Instructions
Place the sliced cucumber, strawberries and avocado in layers on a serving plate.
Scatter the Feta cheese over the salad.
Mix all the dressing ingredients together until smooth, and drizzle the dressing over the salad.
Scatter the chopped mint over the salad.
Serve immediately.
