This creamy sugar free pumpkin spice Irish cream is a delicious combination of pumpkin spice, chocolate and coffee with a kick of whisky. Serve it over ice, add some to your coffee or use it in a holiday cocktail.

There is a new version of the classic Bailey’s with pumpkin spice but is not available where I live. So I decided to make my own keto version. The result was a rich creamy liqueur with all the flavours of a pumpkin pie without the guilt.

HOW MANY CARBS ARE IN BAILEY’S IRISH CREAM?

Despite the creamy goodness, the original Bailey’s Irish Cream has a lot of sugar in it and 10g carbs per 1.5 fluid ounce.
This sugar version uses a sugar-free condensed milk which brings the sugar and carb content down to just over 1g net carb. I have a low carb version of Bailey's Irish Cream too!

HOW TO MAKE COPYCAT PUMPKIN SPICE BAILEY’S IRISH CREAM

This is very easy to make. You simply blitz the ingredients in a blender until smooth and creamy. As you are using pumpkin puree you want to make sure it is fully blended.

The ingredients are sugar free condensed milk, heavy cream, whiskey, pumpkin puree, pumpkin pie spices, coffee and cocoa. I was in two minds about using the pumpkin puree and just using pumpkin pie spices but threw caution to the wind as it’s in the original. It does make the liqueur thicker.

WHAT SPICES ARE IN PUMPKIN PIE SPICE?

If you don’t have a jar of pumpkin pie available, it’s easy to make your own blend. Simply mix 4 teaspoons cinnamon, 2 teaspoons ground ginger, 1 teaspoon ground cloves and ½ teaspoon ground nutmeg.

WHAT WHISKEY CAN I USE?

Now, there’s whiskey and there’s whiskey. The top of the range whiskey is smooth, velvety and too good to use in an Irish Cream recipe. Cheap whiskey is harsh and will alter the taste of this pumpkin spice Irish cream. You want a middle of the range whiskey such as Jameson’s. The whiskey you use will make a difference to the taste.

Ingredients
 
 

  • 1 cup heavy cream
  • 1 1/2 cup sugar free condensed milk recipe link above
  • 1 cup whiskey Add more to personal taste
  • 1 tablespoon instant coffee
  • 1 tablespoon cocoa powder unsweetened
  • 2 tablespoons pumpkin puree
  • 1 1/2 tablespoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract

Instructions
 

  • Place all the ingredients in a blender and blitz until smooth.
  • Taste test and amend with any more cream, spices or whiskey
  • Serve over ice with a dusting of nutmeg & cinnamon.

Notes

This makes 12 1oz servings.
Store in a sealed bottle in the fridge.  Should keep for 2 weeks.
The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
