Roasted Asparagus with Parmesan

Scrumptious roasted asparagus with Parmesan cheese is a simple side dish packed with flavour.   Roasting asparagus is such a simple and quick way to cook this tasty summer vegetable.

Roasted asparagus is a taste of summer on a plate!  Add garlic and Parmesan cheese to make the simple flavours work together for a great side dish.   The best part of this dish, aside the flavour, is it only takes 10 minutes to roast.  Nothing better than a quick dish with minimal fuss for dinner!  The roasted asparagus is great with my tarragon roasted chicken or salmon & broccoli quiche.

Although I have used garlic and Parmesan cheese to this roast asparagus dish you could add lemon juice and grated rind to it for extra flavour.   I will try it once lemons are back in season here as I want to try it with grated rind, not just the juice.  Did you know that there is a law against the import of citrus fruit in St Lucia?  It means that lemons are not readily available for me throughout the year!

How to Choose & Store Asparagus

The stalks should be straight and firm to the touch with closed tips.

Tips should be dark green or purple in colour.  Yellow or dried tips indicated old asparagus.

Size does not matter and freshness does.  Thinner asparagus stalks are sweeter and thick stalks are stronger in flavour.

Store the asparagus in the refrigerator for 2-3 days.

Trim the stalks by an inch and place in water to keep fresh for a few days.

How to Roast Asparagus

Roast in a hot oven with a temperature of 200C/400F degrees.

Season well with salt and pepper and drizzle in olive oil

Cooking time will vary depending on the thickness of the asparagus spears.  Allow an extra 2-3 minutes for thick spears.

Ingredients
 
 

  • 1 lb asparagus
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup Parmesan cheese, grated ideally fresh
  • 2 cloves garlic finely chopped

Instructions
 

  • Preheat oven to 200C/400F degrees.
  • Wash and dry the asparagus.
  • Snap off the ends of the asparagus.
  • Place the asparagus on a baking sheet.
  • Drizzle the asparagus with olive oil and season with the salt and pepper.
  • Sprinkle with garlic and Parmesan over the asparagus.
  • Roast for 10 minutes
  • Serve immediately
