This is a great use of our sugar free candied ginger! Or any excuse to combine ginger and chocolate.

  • Chocolate : Choose a high-quality dark chocolate with at least 70% cacao. This gives the truffles their bold, luxurious flavor and smooth texture.
  • Cream : Heavy cream is the secret to achieving the rich, velvety ganache that forms the heart of the truffle.
  • Rum : A splash of rum enhances the complexity of the chocolate, lending a subtle boozy warmth but entirely optional.
  • Sugar-Free Candied Ginger : These little gems add a pop of sweetness and a spicy kick, all while keeping the recipe keto-friendly. We make our own.
  • Cocoa Powder: The finishing touch! A dusting of unsweetened cocoa powder adds a slightly bitter contrast, balancing the sweetness of the ginger and chocolate.

How To Make Chocolate Ginger Truffles

These chocolate ginger truffles are quick to make but offer a gourmet experience, perfect for a holiday platter, after-dinner indulgence or a thoughtful homemade gift. Let’s get rolling!

Recipe Tips

The flavor of the chocolate is the star, so choose one with at least 70% cacao. If you're keto, opt for a sugar-free brand like Lily's or ChocZero. Avoid baking chocolate unless it’s specifically formulated for sweet treats.

Once the cream and chocolate are combined, let the ganache cool at room temperature or chill in the fridge until it’s firm but still scoopable (about 1–2 hours). Stir occasionally to maintain a smooth texture.

Rolling truffles can get messy! Wearing food-safe gloves keeps the process cleaner and prevents the heat of your hands from softening the truffles too much.

While cocoa powder is classic, you can switch it up! Try finely chopped nuts, shredded unsweetened coconut, or a mix of cocoa and powdered sweetener for added variety.

  • 10 oz dark chocolate chips
  • ½ cup heavy cream
  • 4 tablespoons sugar free candied ginger
  • 2 teaspoons rum optional

Instructions
 

  • In a small saucepan, heat the heavy cream over medium-low heat until it just begins to simmer. Do not let it boil.
  • Chop the chocolate into small, even pieces and place it in a heatproof bowl.
  • Pour the hot cream over the chopped chocolate. Let it sit undisturbed for 2–3 minutes, then stir gently until the chocolate is fully melted and the mixture is smooth.
  • Stir in the rum (if using) and the finely chopped sugar-free candied ginger.
  • Cover the bowl with plastic wrap and refrigerate the ganache for 1–2 hours, or until firm enough to scoop.
  • Using a small cookie scoop or a teaspoon, scoop portions of the ganache and roll them into balls between your palms. (Tip: wear food-safe gloves to minimize melting and mess.)
  • Roll each truffle in cocoa powder until fully coated. Shake off any excess powder.
  • For firmer truffles, place them back in the refrigerator for 10–15 minutes before serving.
  • Serve immediately or store the truffles in an airtight container in the refrigerator for up to one week. Bring to room temperature before enjoying for the best flavor and texture.
