These chocolate ginger truffles are made with sugar-free candied ginger and velvety dark chocolate, these bite-sized treats are finished with a dusting of cocoa powder for a touch of elegance.

In a small saucepan, heat the heavy cream over medium-low heat until it just begins to simmer. Do not let it boil.
Chop the chocolate into small, even pieces and place it in a heatproof bowl.
Pour the hot cream over the chopped chocolate. Let it sit undisturbed for 2–3 minutes, then stir gently until the chocolate is fully melted and the mixture is smooth.
Stir in the rum (if using) and the finely chopped sugar-free candied ginger.
Cover the bowl with plastic wrap and refrigerate the ganache for 1–2 hours, or until firm enough to scoop.
Using a small cookie scoop or a teaspoon, scoop portions of the ganache and roll them into balls between your palms. (Tip: wear food-safe gloves to minimize melting and mess.)
Roll each truffle in cocoa powder until fully coated. Shake off any excess powder.
For firmer truffles, place them back in the refrigerator for 10–15 minutes before serving.
Serve immediately or store the truffles in an airtight container in the refrigerator for up to one week. Bring to room temperature before enjoying for the best flavor and texture.
Makes about 20 small truffles.
Store in the fridge in an air tight container.
