- Cottage cheese - use plain and full fat is preferable.
- Sweetener - any low carb sweetener such as Monkfruit or Allulose can be used.
- Protein powder - helps add a high protein content rather than a low carb flour. Any flavor of protein powder can be used but we enjoyed the chocolate flavor. A chocolate-flavored protein powder gives a more intense chocolate flavor. Make sure it’s a brand you enjoy, as the flavor can vary significantly between brands.
- Cocoa powder - Use a good quality sugar free cocoa powder for a richer chocolate flavor. Dutch-processed cocoa can add a deeper chocolate taste.
- Eggs - room temperature gives a better result in baking.
- Melted chocolate - unsweetened chocolate chips are melted and added to the batter.
- Salt - we also sprinkle our brownies with a touch of sea salt when serving.
How to Make Cottage Cheese Brownies
We blend the brownie batter in a blender but you could make this in a mixing bowl with the cottage cheese mixture blended first before adding to the remaining ingredients.
Place all the ingredients into a blender and blitz until smooth.
Pour into a baking dish or tin and bake for 25 minutes until firm.
Storage
Keep the brownies in an airtight container in the fridge and they will last up to a week. Ingredients
- 1 cup cottage cheese
- ½ cup monk fruit sweetener or other low carb sweetener
- 1 scoop chocolate protein powder
- ⅓ cup cocoa powder
- 2 large eggs
- ¼ cup unsweetened chocolate chips
- ½ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper or lightly grease it.
- Place all the ingredients into a blender or food processor and blitz until smooth. If the mixture is too thick, add some almond or coconut milk.
- Pour the batter into the prepared baking dish and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean.
- Allow the brownies to cool in the pan for at least 10 minutes before slicing and serving.

I made these yesterday. They are awesome!!! We have been trying to find a substitution for treats that even my 7 yr old son will approve of. He is on the Autism Spectrum, so he is extra picky about tastes & textures. He does not approve of any foods that "taste" healthy. To my joy and suprise- he devoured these. They have a different texture than "flour" brownies, but I just tell myself that they are a decadent dessert from a fancy place and my brain is ready for the fudgy-silky texture. Yum!
* I do think that my batch was too moist/undercooked- BUT, I do believe that's my fault. Your recipe said that the batter should be thick. I noticed that mine was not and I should have added extra protein powder to adjust.
