Green Goddess Dressing

This green goddess dressing is a thick creamy salad dressing that can be used as a dip or a marinade. It’s quick and easy to make and packed full of flavour.

The delicious green colour is a great addition to a salad and the taste of herbs in a creamy dressing is almost addictive.  You may be tempted to eat it with a spoon!  It takes 5 effortless minutes to make and is perfect for a quick dip as well as a dressing.

I made this green goddess dressing for the first time without the traditional anchovies purely because neither of us are a fan of anchovies.  Feel free to all them in if you like them.   I became and instant fan of this dressing and could have slathered it over everything.  Suddenly, a salad appeared every day until the dressing ran out.   I used it with eggs in place of mayonnaise, in a marinade for a chicken dish as well as a dip with raw vegetables.

What is Green Goddess Dressing Made Of?

There are a few variations of the green goddess dressing, but the main ingredients are mayonnaise, sour cream, chives, anchovy, tarragon, lemon juice and parsley.  Some versions of the salad dressing have used avocado in place of the dairy which I think would be delicious and add extra green to the colour.

Low Carb Salad Dressing

If you enjoy a creamy salad dressing or just want a change from a simple oil and vinegar salad dressing, then I implore you to try this green goddess keto salad dressing.  It’s thick and creamy with a big flavour that is not too overpowering.  You only need a small amount on your salad.  Well, if you have restraint.  My salad bowl ended up with more dressing than lettuce leaf.

Using this green goddess salad for a marinade got the thumbs up from the Chief Taster.  I went a bit crazy with it and used it in a salmon recipe as well as a chicken dish.  For two days solid the Chief Taster was fed food either slathered or dipped in this salad dressing and there were no complaints.  Believe me, there would have been complaints directed to the kitchen.  He can be a brave man at times…

Ingredients
  

  • 2 garlic cloves peeled & chopped
  • ¾ cup mayonnaise
  • ¾ cup sour cream
  • ½ cup parsley, flat leaved
  • ¼ cup tarragon, fresh
  • 3 tablespoons chives
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions
 

  • Place all the ingredients into a blender and blitz under smooth
  • Store in a jar in the fridge and serve when required.
