Only 5 ingredients make this flourless chocolate cake, and one of them is vanilla essence so perhaps we could call it 4?
This was one of my first flourless chocolate cakes I baked and I’ve recently baked it again initially to improve the photos I originally had. I had forgotten what a joyous, fudge-like explosion of chocolate this cake was! It is rich, gooey and also amazing the next day. I would advise that you serve it with a dollop of cream to freshen the palate as this is very rich. Very decadent, very rich and no flour. Who needs flour when you can have chocolate. It tastes so sinful it will have you lighting up a cigarette and phoning the nearby Priest….
The beauty of this cake is that it is very easy to make. Even the Chief Taster could make this without having to call in the professionals to deal with a damaged kitchen. It is simplicity itself, but serve it to guests and pretend you slaved for hours baking it. It’ll be our secret….
It is so delicious that you will be murmering “if loving you is wrong, I don’t want to be right” as you find a quiet corner to enjoy the last piece.
I’ve shown the nutritional information per 16 pieces since it is a very rich cake you may just want one thin slice. Cut a piece and judge yourself!
Chocolate Cake (No Flour)
450g (2 1/2 cups / 15 1/2 oz) dark chocolate (70% cocoa solids minimum), melted
115g (1/2 cup / 4oz) butter, cut into pieces (add into the chocolate when melting)
6 eggs, separated
115g (1/2 cup / 4oz) erythritol (or sweetner of your choice)
1 tblspn vanilla
- Preheat the oven to 180C/350F degrees.
- Line a 20 cm springform cake tin with baking parchment.
- Whisk the egg whites until stiff. In another bowl, whisk the egg yolks and erythritol until the mixture is thick and pale.
- Whisk the melted chocolate in with the egg yolks and vanilla.
- Fold in the egg whites.
- Put the mixture into the cake tin and bake for 25 minutes until set in the centre. Cool in the tin and remove the paper.
- Eat and enjoy!
