Cheesy Cauliflower Bake

This is like eating a baked potato with cheese but without the high carb potato.   The texture is smooth and cheesey..The wonders of cauliflower…the vegetable that just keeps giving.   A great main dish.

INGREDIENTS

1 cauliflower, washed and cut into florets

150 ml cream

225g grated Cheddar cheese

4 spring onions, finely chopped

Salt and pepper

METHOD

  1. Preheat the oven to 180C/350F degrees.
  2. Cook the cauliflower in a saucepan, bring to the boil and cook for 10 minutes.   Drain.
  3. Mash the cauliflower, add the cream, spring onions and half the cheese.  Season with salt and pepper.
  4. Put the mixture into a shallow casserole dish, top with the remaining cheese and cook for 35 minutes, until the top is crisp and brown.
  5. Eat and enjoy!

    Dear Divalicious In Dubai,
    The cauliflower is rearing its pretty blonde head in my kitchen tonight, too! Husberry is partial to a floret dripping in tasty cheese or even better, emmenthal. So as a main, it will be served up while we watch some B grade movie mooching in our comfy clothes. Perfect COMFORT! Perfect comfort FOOD!
