A cheesy cauliflower bake that is very easy to make.  You could eat it as a side but I enjoy a serving with a side of salad for lunch. This low carb cauliflower bake is like eating a baked potato with cheese but without the high carb potato.

A delicious low carb cauliflower bake featuring a cheesy casserole topped with chopped green onions, all nestled in a white circular dish on a red cloth.

I have baked this cauliflower bake in a big baking dish as a side to share and also in smaller dishes.  I personally like the smaller dishes as they look nicer as an individual side dish.

I can also confirm that this cauliflower bake is delicious cold the next day.  That's probably more of an insight into my morning hunger and images of me in my PJ's with a spoon and a growling stomach.  You could heat up a couple of tablespoons of the cauliflower bake in a frying pan with your morning eggs, like a hash brown.  Or eat some cold with a spoon, whilst talking to your cat like I did.

Why You Will Love This Dish

I love this recipe because it’s the ultimate comfort food that fits perfectly into a keto lifestyle. It takes simple, wholesome ingredients and transforms them into a creamy, cheesy dish that’s both satisfying and nutritious. The combination of tender cauliflower, tangy sour cream and melty cheddar cheese hits all the right notes for flavor and texture.

It’s also incredibly versatile—you can serve it as a hearty side dish alongside your favorite protein or enjoy it as a stand-alone vegetarian meal. Best of all, it’s easy to make, family-friendly, and feels indulgent without the carb overload!

Ingredients

Just four ingredients (plus seasoning) make this delicious cauliflower side dish.

Ingredients for a low carb cauliflower bake on a marble surface: cauliflower, spring onions, cheddar cheese, sour cream, salt, and black pepper.
  • Cauliflower : A medium-sized head of cauliflower cut into florets serves as the low-carb base for this bake. It's mild in flavor and absorbs the creamy, cheesy goodness beautifully.
  • Sour Cream : Adds a tangy richness to the dish, creating a creamy texture that pairs perfectly with the cauliflower.
  • Cheddar Cheese : Sharp and melty, cheddar cheese delivers a savory kick and golden topping that makes this bake irresistibly gooey.
  • Spring Onions : Fresh and mildly sweet, these add a pop of color and a subtle crunch to the dish.
  • Salt : Enhances the natural flavors of the cauliflower and cheese.
  • Black Pepper : Adds a touch of warmth and a hint of spice for a balanced flavor profile.

Spoon into a baking dish and bake until golden.

Recipe Variations

  • Mix in cooked bacon bits, shredded chicken, or crumbled sausage for a heartier dish.
  • Swap cheddar for mozzarella, Gruyère, or Monterey Jack for a different cheesy flavor. A sprinkle of Parmesan cheese can also add a sharp, nutty kick.
  • Add a pinch of red chili flakes, diced jalapeños, or a dash of hot sauce to give the dish some heat.
  • Toss in other low-carb vegetables like broccoli, zucchini, or mushrooms to make the dish more colorful and nutritious.
  • Top with crushed pork rinds or almond flour mixed with Parmesan for a crispy crust.
  • Add minced garlic or garlic powder for a rich, savory boost.

Storing Leftovers

Store leftovers in an air-tight container in the fridge and it should last for 3 to 4 days.

For longer storage, place the cooled bake in a freezer-safe container or wrap it tightly in plastic wrap and foil. It can be frozen for up to 3 months.

When storing and reheating, the cauliflower may release some moisture. To maintain the creamy texture, you can stir the dish slightly or sprinkle a little extra cheese on top before reheating.

Reheating

  • From the Refrigerator: Reheat in the oven at 350°F (175°C) for 10–15 minutes until warmed through, or microwave individual portions for 1–2 minutes.
  • From Frozen: Thaw overnight in the refrigerator, then reheat as above.
