Enjoy a keto danish with your morning coffee. Made with a Fat head dough and filled with a strawberry filling, these also make a great low carb treat.
Although a traditional Danish pastry is made with a flaky, buttery pastry, a Fat head dough makes a pretty good substitute. The pastry needs to be fairly firm so it keeps it's shape as it bakes.
How to make keto danish
I've used almond flour with this fat head dough but you could use coconut flour if you want a nut free low carb dough. I would suggest that you use ½ cup and add it to the melted cheese mixture gradually until you have a solid dough.
The ingredients for this recipe are:
- Mozzarella - Shredded
- Cream cheese
- Almond Flour - Coconut flour can be substituted
- Erythritol - any other low carb sweetener can be used
- Strawberries - I've used sliced strawberries but any other berries or a chia jam will work.
- Baking powder - to help the dough rise.
- Eggs - one medium

If you don't like strawberries or can't find them, try these other low carb danish pastry fillings:
- Blueberries
- Raspberries
- Cranberries
- Faux apples (zucchini or chayote cooked in cinnamon)
- Cream cheese & cinnamon
- Berry chia jam
Recipe Tips
If you don't want to make the dough in a microwave you can melt the cheese by a couple of ways. Either use a bowl over a saucepan of boiling water to melt the mozzarella and cream cheese. Or place all of the dough ingredients in a food processor and blitz until smooth.

Ingredients
- 1 ½ cup mozzarella, shredded
- 2 oz cream cheese
- 1 cup almond flour
- 1 medium egg
- 1 teaspoon baking powder
- 1 tablespoon allulose or other sweetener
Filling
- 1 cup strawberries sliced
- 1 tablespoon water
- 2 tablespoons allulose or other sweetener
Glaze (optional)
- 1 tablespoon cream cheese
- 2 tablespoons allulose or other sweetener
- 1 tablespoon heavy cram
- ¼ teaspoon vanilla extract
Instructions
Filling
- Place the strawberries, water and allulose in a small saucepan on a medium heat. Cook for a couple of minutes until the strawberries are soft. You may need to add more water if the mixture is too dry.
Danish Pastry
- Place the mozzarella and cream cheese in a bowl and microwave for 30 seconds. Stir and microwave for 30 more seconds and stir. Repeat for another minute until the cheese is melted and smooth.
- Mix in the almond flour, baking powder, allulose and egg. Mix thoroughly until you have a dough with even color. Get mixing with your hands if need be.
- Roll the dough between two layers of parchment paper into a large rectangle shape.
- Cut into 6 pieces.
Assembly
- Spoon the strawberry mixture onto one half of the rectangle pieces. Fold the dough over the topping and press down around the edges. I use a fork to seal the edges and give the danish pastries a pattern.
- Place the sealed rectangles onto a parchment paper lined baking paper and bake at 180C/350F degrees for 20-25 minutes until golden.
- Remove and set aside to cool.
- Mix the glaze topping until a blender until smooth. Drizzle or pipe over the Danish pastries.

Is there a mistake in the Cream cheese glaze ingredients? It lists cream cheese twice, 1 tablespoon of cream cheese, and then 1 tablespoon of cream cheese again. I followed those measurements with 2 tablespoons of cream cheese and it was extremely thick. Thanks

Just read your recipe and am gobmacked that you say to nuke the mozzerella and cream cheese for 30 minutes??????????and then for another 30 seconds . Did you really mean to microwave the cheeses for 30 minutes?

I used the leftovers for dipping! You could reduce the glaze in half.
