    Low Carb Microwave Nachos

    These low carb microwave nacho chips are great for a quick appetizer and when you need a keto snack in a hurry.

    Simply made with slices of cheese, spices of your choice can be added for extra flavour. I like mine with a chilli lime spice I have in my spice rack. You won’t believe how easy these are to make. Slice, spice and cook for 2 minutes in the microwave for crispy and quick keto nachos.

    These quick and easy nachos are perfect to make for parties, football season or a night in with a movie. Or a quick and easy snack. Take a few slices of cheese into work for emergency low carb snacks.

    WHAT CHEESE TO USE

    I’ve found that different cheese with yield different results. Some may melt quicker and some will puff up. You can use pre-sliced cheese for ease of the nacho shape but slices of block cheese or grated cheese works too. I have used British Cheddar which is stronger in taste than the American, but both work.

    • American cheese
    • Pepper Jack
    • Cheddar (Yellow & White)
    • Parmesan
    • Gouda
    • Provolone

    HOW TO MAKE LOW CARB MICROWAVE NACHOS

    With hardly any preparation, these microwave nachos are a great quick low carb snack. If you would prefer to make these nachos in the oven, check our my recipe for Cheese Jalapeno Crackers.

    Parchment paper is essential to make these, either in the microwave or oven. You will be left with a cheesy mess otherwise. After making them, you may want to place them on a sheet of kitchen towel to mop up any excess oil from the cheese.

    A simple look at how to make these nachos:

    • Slices of cheese
    • Cut into half
    • Add spices (optional)

    WHAT TO SERVE WITH KETO NACHOS

    These low carb nachos are delicious by themselves but make them divine by serving them with a dip or use them in a low carb recipe requiring nachos. Top a dish of them with spiced beef, avocado and sour cream for a hearty dish. Or slather them with a great 1 minute cheese sauce!

    HOW TO STORE LOW CARB CHEESE NACHOS

    I keep a batch of these microwave nachos in a sealed Tupperware box in the fridge. Chilling them makes them extra crispy at times. You could also store them in a sealed bag. A couple sometimes sneak into the Chief Taster’s lunch box for a snack at work too!

    Ingredients
     
     

    • 3 slices cheese 16g a slice

    Instructions
     

    • Cut the cheese squares into triangles (cut again for smaller nachos)
    • Sprinkle your chosen spice over the triangles.
    • Place the cheese triangles on a piece of parchment paper.
    • Microwave for 2 minutes.
    • Remove and let cool for 1 minute.
    • Eat and enjoy!

    Makes 6 large chips.  Cut into quarters for smaller chips
