Ingredients
Cookies
- 2 cups almond flour
- ¼ cup coconut flour
- ½ cup allulose or other low carb sweetener
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup melted butter
- 1 large egg
- 1 teaspoon vanilla
Keto Ice Cream
- 1 batch keto vanilla ice cream links to the recipe card
Instructions
Make the Cookies
- Preheat the oven to 180C/350F degrees and line a baking sheet with parchment paper.
- In a large bowl, combine the almond flour, coconut flour, allulose, baking powder, and salt.
- In a separate bowl, whisk together the melted butter, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until a dough forms.
- Roll the dough into balls (about 1-2 tablespoons each) and place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand or the bottom of a glass. Or use a cookie cutter for uniform shaped cookies.
- Bake for 10-12 minutes or until the edges are golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Assembling the Ice Cream Sandwiches
- Once the cookies are completely cooled, match them in pairs of similar size.
- Let the keto vanilla ice cream soften slightly at room temperature. Place a scoop of ice cream onto the flat side of one cookie, then top with the flat side of another cookie to create a sandwich. Press gently to spread the ice cream evenly.
- Place the assembled ice cream sandwiches on a baking sheet and freeze for at least 1 hour to firm up before serving.
