Easy keto ice cream sandwiches are made with keto chocolate chip cookies and a creamy keto vanilla ice cream for a summer treat.

Instructions

Make the Cookies

  • Preheat the oven to 180C/350F degrees and line a baking sheet with parchment paper.
  • In a large bowl, combine the almond flour, coconut flour, allulose, baking powder, and salt.
  • In a separate bowl, whisk together the melted butter, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until a dough forms.
  • Roll the dough into balls (about 1-2 tablespoons each) and place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand or the bottom of a glass. Or use a cookie cutter for uniform shaped cookies.
  • Bake for 10-12 minutes or until the edges are golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Assembling the Ice Cream Sandwiches

  • Once the cookies are completely cooled, match them in pairs of similar size.
  • Let the keto vanilla ice cream soften slightly at room temperature. Place a scoop of ice cream onto the flat side of one cookie, then top with the flat side of another cookie to create a sandwich. Press gently to spread the ice cream evenly.
  • Place the assembled ice cream sandwiches on a baking sheet and freeze for at least 1 hour to firm up before serving.

Notes

Chocolate chips can be added to the cookie dough before baking.
Add ¼ cup cocoa powder and ½ teaspoon espresso powder to the cookie mixture for a chocolate cookie.
