Easy keto ice cream sandwiches are made with keto chocolate chip cookies and a creamy keto vanilla ice cream for a summer treat.

Make the Cookies
Preheat the oven to 180C/350F degrees and line a baking sheet with parchment paper.
In a large bowl, combine the almond flour, coconut flour, allulose, baking powder, and salt.
In a separate bowl, whisk together the melted butter, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until a dough forms.
Roll the dough into balls (about 1-2 tablespoons each) and place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand or the bottom of a glass. Or use a cookie cutter for uniform shaped cookies.
Bake for 10-12 minutes or until the edges are golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Assembling the Ice Cream Sandwiches
Once the cookies are completely cooled, match them in pairs of similar size.
Let the keto vanilla ice cream soften slightly at room temperature. Place a scoop of ice cream onto the flat side of one cookie, then top with the flat side of another cookie to create a sandwich. Press gently to spread the ice cream evenly.
Place the assembled ice cream sandwiches on a baking sheet and freeze for at least 1 hour to firm up before serving.
Chocolate chips can be added to the cookie dough before baking.
Add ¼ cup cocoa powder and ½ teaspoon espresso powder to the cookie mixture for a chocolate cookie.
