Enjoy these easy seed and nut keto breakfast cookies to start the day. Low in carbs, high in protein and perfect for a breakfast on the go. These flourless keto cookies are a delicious sweet crunchy treat at just 2 grams net carbs a cookie.

With a mixture of sliced almonds, hemp hearts, desiccated coconut and pumpkin seeds these low carb breakfast cookies are like a granola cookie. Full of crunch and a chewy texture with a hint of sweetness from the coconut and keto honey. Low carb, gluten-free and dairy-free these cookies tick a lot of nutritional boxes.

This is a great low carb breakfast cookie you could use your own preference of nuts and seeds too. Add chocolate chips or dried cranberries for additional flavor or texture. They were a bit hit with us and on the long list of requested recipes to bake weekly!

What nuts are keto friendly?

Nuts can be a great snack option for those following a ketogenic diet due to their low carb and high fat content. Here are some nuts with their approximate net carb content per 1 ounce (28 grams) serving:

  1. Macadamia nuts: ~2 grams of net carbs
  2. Pecans: ~1.2 grams of net carbs
  3. Brazil nuts: ~1.4 grams of net carbs
  4. Walnuts: ~2 grams of net carbs
  5. Hazelnuts: ~2 grams of net carbs
  6. Almonds: ~2.5 grams of net carbs

These values can vary slightly depending on the specific brand or variety of nuts, so it's always a good idea to check the nutritional information on the packaging when available.

Benefits of Hemp Hearts

We are a big fan of hemp hearts and try to add them into meals, smoothies and scatter over salads for a keto diet.

Hemp hearts are a great source of essential nutrients such as protein, healthy fats (particularly omega-3 and omega-6 fatty acids), vitamin E, and minerals like magnesium, potassium, phosphorus, and iron.

They are a complete source of protein, meaning they provide all nine essential amino acids that the body cannot produce on its own. This makes them an excellent option for vegetarians, vegans, or anyone looking to increase their protein intake.

Ingredients

Just a few ingredients make this easy keto breakfast cookie recipe.

  • Keto honey - a liquid sweetener helps bind the cookies and we use our favorite keto honey for this. You could use powdered or granulated low carb sweetener instead but may need to add a dash of liquid to help bind the cookies.
  • Hemp hearts - a great source of protein and omega-3 fatty acids.
  • Desiccated coconut - also know as coconut flakes, ensure that they are unsweetened.
  • Sliced almonds - you could chop whole almonds if you don't have sliced almonds.
  • Pumpkin seeds - adds a touch of crunch and color to the cookies as well as being packed with essential nutrients, including protein, healthy fats, fiber, vitamins, and minerals such as magnesium, zinc, iron, and potassium.
  • Egg - great for binding the cookies. If you want a vegan cookie, use a flaxseed egg, seed butter or almond butter.
  • Salt - just a touch to balance the sweetness. Sea Salt gives a great taste.
  • Vanilla - adds a touch of sweetness.
  • Chocolate - this is an optional ingredient. We drizzle melted sugar-free chocolate chips over the cooled cookies.

How to make keto breakfast cookies

This is a quick healthy breakfast cookie recipe to bake with minimal effort. My favorite type of recipe! Although the downside is the regular request for a batch of these from the Chief Taster.

Mix all the dry ingredients together.

Add the egg and stir well.

Press into cookie shapes and bake until firm.

Recipe Tips

Incorporate sources of healthy fats like coconut oil, butter, or nut butter into the cookie dough to help keep them moist and add richness to the flavor.

Enhance the flavor of your cookies with keto-friendly flavorings such as vanilla extract, cinnamon, nutmeg, or unsweetened cocoa powder. These add depth to the taste without adding extra carbs.

Storage

Can You Freeze Keto Breakfast Cookies?

For longer-term storage, you can freeze the cookies. Wrap them individually or place them in a single layer on a baking sheet and freeze until solid. Then transfer them to a freezer-safe bag or container, removing as much air as possible before sealing. Frozen keto cookies can last for several months. Thaw them at room temperature or in the refrigerator before serving.

Ingredients
 
 

  • ½ cup sliced almonds
  • ½ cup pumpkin seeds
  • ½ cup desiccated coconut, unsweetened coconut flakes
  • ¼ cup hemp hearts
  • ¼ cup keto honey
  • 1 large egg
  • 1 teaspoon vanilla
  • ¼ teaspoon salt

Instructions
 

  • Preheat the oven to 180C/350F degrees and line a baking tin with parchment paper.
  • In a large bowl add all the dry ingredients and mix well.
  • Add the egg and vanilla and mix thoroughly.
  • Use a medium cookie scoop and scoop the cookie mixture. Place on the parchment lined baking tray.
  • Flatten the cookie mixture into an even circular shape and bake for 15 minutes until golden and firm.
  • Once cool, place in the fridge and chill for 30 minutes for the cookies to firm.
  • An optional addition is to drizzle melted chocolate over the cookies.
  • Eat and enjoy!
