  • Preheat the oven to 180C/350F degrees and line a baking tin with parchment paper.
  • In a large bowl add all the dry ingredients and mix well.
  • Add the egg and vanilla and mix thoroughly.
  • Use a medium cookie scoop and scoop the cookie mixture. Place on the parchment lined baking tray.
  • Flatten the cookie mixture into an even circular shape and bake for 15 minutes until golden and firm.
  • Once cool, place in the fridge and chill for 30 minutes for the cookies to firm.
  • An optional addition is to drizzle melted chocolate over the cookies.
  • Eat and enjoy!
