Packed with nutrient-rich ingredients as nuts, seeds, coconut and hemp hearts, keto breakfast cookies provide a wholesome way to kickstart your day. They're not only delicious but also portable, making them an ideal grab-and-go option for busy mornings.

Preheat the oven to 180C/350F degrees and line a baking tin with parchment paper.
In a large bowl add all the dry ingredients and mix well.
Add the egg and vanilla and mix thoroughly.
Use a medium cookie scoop and scoop the cookie mixture. Place on the parchment lined baking tray.
Flatten the cookie mixture into an even circular shape and bake for 15 minutes until golden and firm.
Once cool, place in the fridge and chill for 30 minutes for the cookies to firm.
An optional addition is to drizzle melted chocolate over the cookies.
