We are a big fan of hemp hearts and try to add them into meals, smoothies and scatter over salads for a keto diet.

Just a few ingredients make this easy keto breakfast cookie recipe.
- Keto honey - a liquid sweetener helps bind the cookies and we use our favorite keto honey for this. You could use powdered or granulated low carb sweetener instead but may need to add a dash of liquid to help bind the cookies.
- Hemp hearts - a great source of protein and omega-3 fatty acids.
- Desiccated coconut - also know as coconut flakes, ensure that they are unsweetened.
- Sliced almonds - you could chop whole almonds if you don't have sliced almonds.
- Pumpkin seeds - adds a touch of crunch and color to the cookies as well as being packed with essential nutrients, including protein, healthy fats, fiber, vitamins, and minerals such as magnesium, zinc, iron, and potassium.
- Egg - great for binding the cookies. If you want a vegan cookie, use a flaxseed egg, seed butter or almond butter.
- Salt - just a touch to balance the sweetness. Sea Salt gives a great taste.
- Vanilla - adds a touch of sweetness.
- Chocolate - this is an optional ingredient. We drizzle melted sugar-free chocolate chips over the cooled cookies.
How to make keto breakfast cookies
This is a quick healthy breakfast cookie recipe to bake with minimal effort. My favorite type of recipe! Although the downside is the regular request for a batch of these from the Chief Taster.
Mix all the dry ingredients together.
Add the egg and stir well.
Scoop the mixture onto a parchment paper lined baking sheet.
Press into cookie shapes and bake until firm.

Ingredients
- ½ cup sliced almonds
- ½ cup pumpkin seeds
- ½ cup desiccated coconut, unsweetened coconut flakes
- ¼ cup hemp hearts
- ¼ cup keto honey
- 1 large egg
- 1 teaspoon vanilla
- ¼ teaspoon salt
Instructions
- Preheat the oven to 180C/350F degrees and line a baking tin with parchment paper.
- In a large bowl add all the dry ingredients and mix well.
- Add the egg and vanilla and mix thoroughly.
- Use a medium cookie scoop and scoop the cookie mixture. Place on the parchment lined baking tray.
- Flatten the cookie mixture into an even circular shape and bake for 15 minutes until golden and firm.
- Once cool, place in the fridge and chill for 30 minutes for the cookies to firm.
- An optional addition is to drizzle melted chocolate over the cookies.
- Eat and enjoy!

Hi Angela,
I really like the sound of this recipe though am trying to go Lectin free as much as possible.
Please advise if the Pumpkin Seeds (which are Lectins) are interchangeable with other nuts or perhaps basil or sesame seeds.
Also, by adding a nut butter such as Macadamia Nut Butter will that change the consistency - add too much oil to the end result, or would it act as a binding agent?
If using a nut butter, how much would you suggest to add?

The pumpkin seeds can be swapped with other seeds or nuts. If you are using a nut butter, you might want to omit the egg. I would try with 1/4 cup of nut butter. If the mixture looks too dry add another couple of tablespoons. Happy baking!
