Is Salmon Keto Friendly?
Salmon is an excellent food for a keto diet as it has zero carbohydrates, a good fat source, full of Omega-3 fatty acids, is high in selenium, a good source of protein and potassium and high in B vitamins. Incorporate salmon into your diet weekly.
Choosing the right cut of salmon
If you are purchasing fresh salmon fillets from the store, farmed salmon should have a light pink color to it and wild-caught salmon should be dark pink. The fillet should be shiny in appearance and firm to the touch. Fresh fish should never smell "too fishy" either. The smell should be slightly briny.
For frozen salmon fillets, check the colour of the fish, ensure that the skin does not have any brown spots and that there are no ice crystals inside the packaging.
There are many types of salmon available in some countries and to learn more, click the button below. We have just one type and I'm just grateful when it appears in the shops!
Simple Ingredients
Just a few ingredients are required to make this dish. It's basically salmon fillets, butter, garlic and seasoning.
The parsley can be flat leafed or curly. I used whatever is available.
For the salmon fillets, fresh or frozen can be used. If you are using frozen, defrost in the refrigerator before use.
How to make keto baked garlic butter salmon
This is an easy low carb salmon dish that does not have many steps. It's quick to make too so is great to make when you don't want to spend a long time in the kitchen but need something delicious to eat.
- In a small bowl, add the garlic butter ingredients.
- Mix well and ensure that the butter is soft as it makes it easier to spread.
- Place the salmon fillets skin side down an a parchment paper lined baking sheet.
- Slather the salmon fillets with the garlic herb butter and you are ready to bake.
What to serve with oven baked salmon fillet?
Serve this with a simple salad as you have 15 minutes to prepare a side dish as this bakes. Salmon pairs well with asparagus and broccoli, so try serving this baked salmon recipe with air fried asparagus or a broccoli red pepper salad. I served this with roasted broccoli florets and the Chief Taster made his happy noises.
The garlic sauce from the salmon dish could be mopped up with slices of our low carb rosemary and olive bread.
What to do with leftovers
This is a recipe for 2 but if you have any leftovers, the salmon can be reheated the next day. Store the fillet in an air tight container in the refrigerator and reheat it either in a microwave or on the stove top. Keep some of the garlic butter separate to pour over the reheated salmon.
Any leftover baked salmon could be flaked and mixed with a tablespoon of sour cream or mayonnaise for a creamy salmon salad.
Can you grill this salmon recipe?
If it's too hot to have the oven on or you want to grill your food, this low carb salmon recipe can easily be made on the grill. You will need to flip the salmon over half way through cooking so keep some of the garlic butter mixture aside to baste the salmon with.
Recipe Tips
We kept the skin on before baking as this prevents the fish from drying out and help keeps it's delicate shape.
Squeeze a wedge of lemon juice over the cooked salmon once removed from the oven for an extra taste.
