Hazelnut and Orange Cookies

I experimented with ground hazelnuts in place of ground almonds to make a cookie and was pleasantly surprised.  These are a soft, chewy cookie with a lovely hint of orange that combines well with the hazelnut.   The recipe is easy to do.  You could get the children to whip up a batch whilst you sit back on the sofa!   Or I could perhaps persuade the Chief Taster to make up a batch…stranger things have happened in the kitchen!    



Hazelnut & Orange Cookies

  1. 1 cup ground hazelnuts
  2. 2 tablespoons butter
  3. 4 tablespoons erythritol
  4. 1 egg white
  5. 1/8 teaspoon vanilla
  6. 1/4 teaspoon ground cinnamon
  7. 1/8 teaspoon ground nutmeg
  8. Grated rind of one orange
  9. Pinch of salt
  1. Preheat the oven to 170C/325F
  2. Mix all the ingredients in a bowl and blend well into a dough.
  3. Scoop out about a tablespoon of the dough and make a ball from it.
  4. Place on a parchment paper lined baking tray.
  5. Using the back of a spoon, press the dough ball down to make a cookie shape.
  6. Bake for 20 minutes until firm.
  7. Eat and enjoy!
  1. Makes 8 -10 cookies

    hi instead of erythritol can i use stevia?

      Of course! But ensure that the quantities are smaller as stevia is very sweet and only needs a small amount.
