This creamy cottage cheese Alfredo sauce is an easy low carb and high protein sauce that can be poured over zucchini noodles, spaghetti squash or low-carb pasta. This is a thick creamy sauce that you will want to eat with a spoon!
We used cottage cheese as a replacement for cream cheese which is used in our low carb Alfredo sauce recipe as it has a higher protein content. The cottage cheese is blended before use for a smoother sauce. To be honest, I don't care for the lumpy cottage cheese, but once it is blended you would never know it's cottage cheese!

Ingredients

Ingredients
- 1 cup cottage cheese plain
- 1 cup Parmesan cheese, grated
- 3 cloves garlic, minced
- 2 tablespoons butter, unsalted
- 1 teaspoon Oregano, dried
- 1 cup heavy cream
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Place the cottage cheese in a blender and blitz until smooth.
- In a large saucepan, heat the butter on a medium heat and cook the garlic for 2 minutes.
- Add the cottage cheese, Parmesan cheese, heavy cream and seasoning. Simmer on a low heat until the cheese has melted and the sauce is smooth.
- Remove from the heat and serve with low carb pasta, zucchini noodles or with chicken, fish or vegetables.
